Ingredients:

- 1 bunch of collard greens

- 1 tbsp coconut oil

- 1 small onion, chopped (1/2 red pepper - if desired)

- 2 cloves of garlic, minced

- 1 can (13.5 oz) coconut milk

- 2 tsp curry powder

- Salt and pepper to taste


Instructions:

1. Wash the collard greens thoroughly, trim off the tough stems, and chop the leaves into bite-sized pieces.

2. In a large pot, heat the coconut oil over medium heat. Add the chopped onion, peppers and garlic, and sauté until the onion is translucent.
