Delicious Okra Tomato Stew
Okra, commonly known as ladies fingers, is an important vegetable in African cooking and plays a prominent role in African cuisines. Ingredients
1 - 14 ounce package smoked turkey sausage sliced in rounds
2 tablespoons cooking oil
1 cup chopped green spring onion
1 chopped green pepper
1-14 ounce can diced tomatoes
2 cups chopped fresh okra
1 cup fresh, canned or frozen corn
1- 1/4 teaspoon salt
2 teaspoons light brown sugar
1/2 teaspoon paprika
1 cup fresh zucchini chopped
1 teaspoon minced garlic
1/2 teaspoon Cajun seasoning
Several drops hot sauce
Directions
In a large pot, brown sausage, green onion and green pepper in cooking oil.
Add tomatoes, corn, okra, zucchini, garlic and season.
Let simmer covered for 15-20 minutes until okra is tender.
Serve over rice and enjoy!
